Its my all time favourite, every time we went to a restaurant I burnt my tongue because I couldn’t wait for it to cool down. It just tastes so good from with the roasted onion, fresh herbs and crispy toast. This creamy soup is simple to make but it will definitely awe your guests.
Ingredients:
2 tablespoons olive oil
1 kg onion
2 cloves of garlic
1 tablespoon of flour
500 ml single cream
500 ml water
li1 bunch of fresh thyme
salt, pepper
1/2 whole nutmeg
1 small baguette
cheddar cheese
Peel the onion, chop into small pieces and brown in hot olive oil. It will take 10-15 minutes till all the onions are ready. Season with generous amount of salt, pepper, grid the 1/2 nutmeg into the pan.
Separate the thyme leaves from the stems and add to the soup. Sprinkle the flour over the top and mix well. Pour the water and the single cream inside and cook for another 10-15 minutes to let the flavours combine.
Slice up the baguette, lay one slice of cheese on the top and roast it in hot oven for a few minutes. Offer the hot toast with soup.

Tip:
Instead of cheddar try out with some strong blue cheese like Stilton.
