I learnt this recipe from my grandma, Neni. When she lived down the countryside, we visited her on some weekends. The sweet smell of the dessert filled up her kitchen and I would go straight off on my cake hunting expedition. I desperately wanted to discover the location of the cake. I opened all the cupboards and even stole the larder key from the hook. But my granny was smarter than me and hid the treasure until the end of lunch.
Ingredients
4 eggs
250 g flour
250 g caster sugar
250 g butter
150-200 g cherries,
1 tablespoon vanilla sugar
25 g flaked almond
1 tablespoon of cinnamon
Clean the cherries and remove the pips. Sprinkle some cinnamon over and put aside.
Mix the egg yolks with the sugar and butter till you get a light, bright batter then add the flour.
Preheat the oven for 200°C. Beat up the egg whites and gently combine with the batter then pour into a greased deep baking tray. Put the cherries halfway into the batter and sprinkle with the almond flakes
Bake for 40 minutes. Cool down before slicing.
