Here I am again introducing another recipe from my mother’s collection. I guess we shared a kitchen for a long time after all! This chicken recipe is never dry as the single cream moisturizes it perfectly. All the lovely flavours from the chicken combine with the cheese coating, garlic, pepper and mustard and gives a beautiful seasoning to the dish.
Ingredients:
520 g chicken breast fillet
200 g mild cheese
3 eggs
1/2 teaspoon mustard powder
250 ml single cream
4 tablespoon of flour
2 cloves of garlic
1 tablespoon butter
pinch of grated nutmeg
salt, pepper
Season the chicken with salt and pepper and preheat the oven to 210°C. Grease the baking tray with the butter.
Beat the eggs in a bowl with the mustard powder and crushed garlic and add a pinch of salt. Grate the cheese into a plate and pour the flour into the other plate. Roll the chicken in the flour, then in the egg and finally in the grated cheese before placing on a backing tray. Sprinkle some nutmeg and pour the single cream all over then cover with tin foil. Put in the oven and cook for 40 minutes then remove the foil and grill for 10-15 minutes.
Serve straight from the oven, offer some rice on the side.
Tip: Use some smoked cheese for battering the chicken
