Pumpkin spiced oaty chocolate chip cookies

Don’t know what to do with all the leftover pumpkin from Halloween? Or you’re simply addicted to your pumpkin spiced latte? Then you’re better try these pumpkin spiced cookies out. Ingredients:

For the pumpkin pure:

1 cup chopped pumpkin

1 tablespoon cinnamon

1 tablespoon allspice

1 teaspoon salt

1 teaspoon pepper

2 tablespoon olive oil

Mix and bake until soft. Mash to make pumpkin pure.

 

For the cookies:

120 g soft butter

1/2 cup sugar (mixture of caster and brown)

1 egg

1 cup rolled oats

1 cup flour

1 teaspoon baking powder

1 tablespoon vanilla extract

1 cup spiced pumpkin pure

1/2 cup chocolate chips

Preheat the oven to 180C fan bake.

Mix all ingredient well to combine. Scoop 1 tablespoon onto a baking tray and bake for 12-15 minuted. Once golden brown, transfer to a rack to cook. Store in airtight container for up to a week.
