Victoria’s kisses

It was not so long ago that I made this recipe for the first time. One of my friends was supposed to come over for a chat when I realised I had nothing to offer for tea time. I skimmed my half empty cupboard for a few seconds then from almost nothing baked these delicious and light sponge kisses in a flash. I must say that with a cup of Darjeeling there is nothing better than these!

Ingredients:

6 eggs

250 g icing sugar

250 g self raising flour

vanilla

jam

Beat up the eggs with an electric mixer then add the sugar and stir for a few minutes. Boil some water and continue mixing over the steam with a spoon till it thickens. Remove from the heat but keep on stirring till it cools down.

Cut the vanilla in half and with a knife scratch all the seeds out and add it with the flour to the batter and mix well.

Cover your tray with baking paper and with a teaspoon scoop small amounts of the mixture into blobs leaving generous spaces between them. Sprinkle some icing sugar on the top and bake them in a preheated oven on 200°C for 10-15 minutes.

When you take them out remove straight from the baking paper, and stick them together using jam on the flat side of one half. Enjoy with a nice cup of tea!

Cooking time: 45minutes

Tip: Instead of jam you can use some melted chocolate to stick together the sides
